Honey

The bees have to visit 15 million flowers to collect enough nectar to make 1 jar of honey. In the Autumn the bees forage on local purple Ling heather which flowers for a short period. They collect the very special nectar which they make into Heather Honey which is 'thixotropic' and has a jelly-like consistency and bubbles where it has been cold-pressed through muslin. Heather honey has a strong, distinctive taste and is a powerful antioxidant with properties similar to Manuka Honey.
